Is NMR the Gold Standard for Indian Honey? Not Quite.

NMR is treated, almost everywhere, as the final word on honey purity. It is a brilliant test — but it has a blind spot in India, and it is one that matters if you are building a honey brand. NMR reads a honey by comparing it against a reference database of known honeys, and India’s extraordinary floral diversity is barely in that database. The result: a genuine Indian honey can be flagged as “atypical” not because it is adulterated, but because the database has never seen it before. For Indian honey, a correctly-performed FSSAI test with a per-batch Certificate of Analysis is the more honest proof of purity.

Is NMR testing reliable for Indian honey?

NMR is reliable for detecting common adulteration such as rice or cane sugar syrup — that is what it caught in 2020. Its weakness is botanical authentication: it compares a sample against reference databases built largely on European and internationally-traded honeys. India’s flora is diverse and underrepresented in those databases, so genuine Indian monofloral and multifloral honeys can be flagged as atypical. That is a database limitation, not proof of adulteration.

What is the best way to test honey purity in India?

For Indian honey, a correctly-performed FSSAI test combined with a per-batch Certificate of Analysis is the most reliable everyday proof. FSSAI’s standards cover moisture, sucrose, the fructose-glucose ratio, HMF, and the C4 sugar test for cane-sugar adulteration. The key phrase is “correctly performed” — the test is only as good as the lab and the sampling behind it.

Why can authentic Indian honey fail an NMR test?

NMR matches a sample’s molecular fingerprint to a reference database of known authentic honeys. When a genuine Indian varietal — a wild forest, sidr, or jamun honey — isn’t well represented in that database, the system has nothing accurate to compare it against and can return an atypical or inconclusive result.
