What happened in 2020 — and why everyone started asking for NMR
In late 2020, an investigation by the Centre for Science and Environment (CSE) tested a set of India’s leading honey brands. Most of them sailed through the routine purity tests Indian labs had relied on for years. Then the samples were sent for the more advanced NMR test — and a majority failed, showing adulteration with modified sugar syrups engineered specifically to slip past standard testing.
The story made national news, and it changed the conversation overnight. Honey buyers stopped asking “is it pure?” and started asking “can you prove it?” Documented purity stopped being a premium nicety and became a baseline expectation. NMR — the test that caught what others missed — became the word every serious buyer now repeats.

NMR — nuclear magnetic resonance — is the same family of science behind an MRI scan. Instead of imaging a knee, a honey-profiling NMR machine reads the full molecular fingerprint of a honey sample: its sugars, amino acids, organic acids and dozens of other markers, all at once.
The part most people miss
NMR does not “detect purity” on its own. It produces a fingerprint, then compares that fingerprint against a reference database of honeys already known to be authentic. The verdict is only as good as the database behind it. No reference for your honey type, no reliable verdict.
The blind spot for Indian honey
Here is the problem. The large commercial NMR honey databases were built where the testing industry matured — on European and internationally-traded honeys. Acacia, rapeseed, a handful of well-documented multiflorals. India’s honey is a different world: jamun from the floodplains, sidr from the desert, wild forest honey from tribal belts, ajwain, moringa, litchi, eucalyptus, mustard — hundreds of floral sources, most of which have never been entered into those reference sets.
When a genuine Indian varietal arrives that the database does not recognise, NMR has nothing accurate to compare it against. It can return an “atypical” or inconclusive result — and a founder reads that as a fail. The honey is real. The reference set simply does not know it yet. In my experience, only the most fundamental, globally-traded honey types pass NMR cleanly in India; the more distinctive and interesting the varietal, the more likely it is to be misread.
So was the 2020 scandal NMR’s vindication or its limitation?
Both — and holding both is the whole point. NMR was right in 2020 because rice and cane syrups have a clear, well-understood signature; catching them does not need a perfect database of Indian florals, it needs the molecular tells of a sugar that has no business being in honey. That is exactly what NMR is good at.
Its weakness is the opposite task: confirming that an unusual but genuine honey is what it claims to be. Catching obvious adulteration is one job. Authenticating India’s diverse florals is another — and on the second job, a database built somewhere else is the wrong yardstick.
What actually proves purity for Indian honey
For honey produced and sold in India, the most reliable everyday proof is a correctly-performed FSSAI test paired with a per-batch Certificate of Analysis. FSSAI’s honey standard already covers the markers that matter: moisture, sucrose, the fructose-to-glucose ratio, HMF (which tells you whether honey has been over-heated), and the C4 sugar test that catches cane-sugar adulteration.
The two words that carry all the weight are correctly performed. A test is only as trustworthy as the laboratory running it and the way the batch was sampled. A clean FSSAI report from a competent lab, issued against the specific batch in your jar — not a generic certificate waved at you once — tells you more about Indian honey than an NMR verdict drawn from a database that has never met your varietal.

No single test is universally “best” — each answers a different question. Read top to bottom, this is how proof stacks up for Indian honey:
Certificate of Analysis (CoA). Per-batch report on moisture, HMF, sugar profile and a basic adulterant screen. Your everyday workhorse — it should ship with every batch.
Agmark grading. A government grading mark, still respected by many institutional and Ayurvedic buyers.
FSSAI testing. The domestic standard, and when correctly performed, the most reliable practical proof for Indian honey.
NMR profiling. Powerful for catching sugar-syrup adulteration; limited for authenticating India’s underrepresented florals. Worth running when an export buyer specifically asks for it.
LC-HRMS mass spectrometry. A higher-end lab method for tracing specific adulterants; same database caveats apply at the botanical level.
DNA / pollen analysis. Emerging botanical-origin verification — promising, but not yet an everyday requirement.
What to ask any honey supplier about their testing
Whether you talk to us or anyone else, these five questions separate a real supplier from a reseller with a borrowed certificate:
- Is the report batch-specific? A certificate that isn’t tied to the batch in your jar proves nothing about your honey.
- Which lab issued it, and is it accredited? “Correctly performed” starts with a competent, accredited laboratory.
- Does the FSSAI panel include the C4 sugar test? This is the one that catches the most common adulteration.
- If you push NMR, do you understand its limits for Indian varietals? A supplier who treats NMR as infallible may not know their own product.
- Can I see the testing on a sample before I commit? Proof you can hold beats proof you’re promised.
